Students showed their artistry in Chocolate Centerpieces class
Students in the Summer Semester class Chocolate Centerpieces (PAS 230) learned techniques for creating unique candy sculpture and then crafted their own examples of these extravagant decorations.
You can view the finished pieces if you walk past the Culinary/Pastry lab in ATLC 227, or you can admire the photos above and below.
The accelerated summer class met twice a week, for 6 hours per day, from May 17 to June 28.
Chef Betsy LaSorella said course activities finished with a tour of the Maverick Chocolate Company location at Rookwood Commons, where co-owner Paul Picton showed students the process of making chocolate, from ethically-sourced cacao beans to bar.
“The tour was a great opportunity for the Pastry students to see hand-crafted chocolate making in action, right here in our own city,” Chef LaSorella said.
